3 eggs
2 cups sugar
3 cups flour
1 cup oil
2 cups fruit or veggies
1/2 tsp cinnamon
1/2 tsp allspice
1 tsp salt
1/4 tsp baking powder
1 tsp baking soda
1 Tbsp vanilla
Mix well. Pour into greased & sugared pans. Bake at 325 degrees for 45 minutes (or until done). You can tell when it pulls from edges or you can use the toothpick test.
You can use just about anything; however do not use apricots. They do not work well.
Some suggestions include carrots, peaches, zucchini, cranberries, blueberries, strawberries, pumpkin, apples, etc. (the riper the better)
