Banana Cookies






1 C butter (I use butter flavor Crisco)
1 C sugar
2 eggs
1 C mashed banana
1/2 C buttermilk (I use sour cream)
1 tsp vanilla
1 1/2 tsp soda
1/2 tsp salt
3 1/2 C flour (more to stiffen)
about half a bag of milk choc chips


Cream butter and sugar together, add eggs. Mix in banana and buttermilk (sour cream) and vanilla. Mix in dry ingredients. Add enough flour so that it is more like a soft dough. (For my double batch, I added more than another cup.) It should be a little sticky. Add choc chips.



















Lightly spray cookie sheet and place about a tablespoon size dallup (is that spelled right?) mound for each cookie. They will not flatten and spread.


Bake at 350 degrees for about 8 to 10 minutes.


The cookies don't brown unless they are over done. If the edges look slightly brown and the middle is set then they are done.

Frosting
1/2 c melted butter or margarine
1 tsp vanilla (I use banana extract!)
1 Tbs milk
2 C powdered sugar
Cream together and frost cooled cookies.
Some say it makes the cookie, some say they don't need the frosting at all.
Beware these are VERY yummy!! I doubled this recipe and it made over 100 cookies! But both times I've made it, they have been gone in two days!

I guess you could use banana extract instead of vanilla extract in the actual cookie recipe as well. Hmmmm
