Chicken Mozzarelle

I decided to share one of my favorite Chicken recipes. If you like mushrooms you will love this one.

2 Tbsp butter
2 cloves garlic, pressed or minced
1/2 medium red onion
1/2 lb fresh mushrooms, sliced
4 boneless skinless chicken breasts
1/2 tsp salt
1/4 tsp pepper
1/2 tsp EACH basil and tarragon
1 tsp Herb Chicken Seasoning
1/4 cup white grape juice
3/4 cup chicken broth
1 cup grated mozzarella cheese

Melt butter in frying pan. Saute garlic, onion and mushrooms until limp. About 5 minutes. Remove and set aside.

Brown chicken in same frying pan, adding additional butter if needed, until golden brown. Season with salt, pepper, and Herb Seasoning. Place in shallow casserole dish without overlapping. Pile reserved vegetables over chicken.

In same frying pan add basil, tarragon, grape juice and chicken broth. Cook for 1 minute stirring to remove crusty bits. Pour over chicken and vegetables.

Cover and bake at 350 for 30 minutes. Remove cover and sprinkles with shredded cheese. Return to oven, turn it off, and let sit for an additional 10 minutes until cheese has melted.

I used a three cheese grated blend I had on hand, and it still tasted wonderful.

Great with rice pilaf and steamed vegetables.
