Fabulous Apple Pie


1 recipe of your favorite 9 inch double pie crust

1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
1 tsp cinnamon
8 Apples - peeled, cored and sliced

Preheat oven to 375°F.

Put prepared apples in a microwavable bowl, cover with plastic wrap and microwave on high for 5 minutes. This blanches the apples and allows for a softer pie.

Mix apples with cinnamon and set aside.

Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.

Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust.

Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

Bake for about an hour in the preheated oven, until golden brown. Don't forget to put a cookie sheet or something under the pie to catch the juice when it bubbles over!
