Tonight "Bajios"

Tonight we had some wonderful homemade burritos.

My husband said he wanted black beans tonight, so I made a vegetarian type of Bajios burritos. It was very good.

1 cups dried black beans soaked overnight (or you can do the one minute boil, let sit for an hour method)
water, enough to cover beans
1 tsp salt
1 cloves garlic
1 tsp ground cumin
1/2 tsp chili powder
1 cup tomato juice
2 Tbsp chopped fresh cilantro

Combine beans, water, salt, garlic and cumin in pressure cooker. Cook for 30 minutes. Add tomato juice and cilantro.

Combine with Lime Rice, Chicken, grated cheese, pico de gallo, tortilla chips, green leaf lettuce and the salad dressing. Just like Bajios salad!

Jennie-If I am doing the overnight soak method. Do I need to mix the ingredients together the next day in a slow cooker & cook them until done?

Yes! Mix the ingredients in with the beans; unless you are putting in something that is acidic.
Keep your acidic ingredients out until you are finished cooking the beans; so don't cook the beans with the tomato juice!
The acid keeps the beans from softening.
