Pumpkin Chocolate Chip Pancakes

One of our favorites!

2 cups bisquick
2 Tbs packed light brown sugar
2 tsp cinnamon
1/4 tsp ground allspice
1 12oz can evaporated milk
1/2 cup solid pack pumpkin (Libby's)
2 Tbs vegetable oil (I use canola)
2 eggs
1 tsp vanilla
mini chocolate chips (opt)

You can use a mixer, I just use my whisk, it's easy to mix and easier to clean up.



In a bowl combine bisquick, b. sugar, cinnamon and allspice and mix well.







Add pumpkin, oil, eggs, vanilla and evaporated milk and mix well again. I like to add a handful of mini choco chips and mix again.




Pour about a 1/4 cup of batter onto hot, lightly sprayed griddle (about 350 degrees) and cook like pancakes.

Makes about 16 pancakes!
