Almond Butter Balls - Danish

These were my dad's favorite Christmas cookie. My Grandma (amazing cook) would make them for him every year!

1 cup soft butter*
3 Tbsp powdered sugar
1 tsp vanilla
1/4 tsp almond extract
1 - 2 cups flour (sifted)
1 cup chopped almonds (slivered works great as well)
Powdered sugar

Cream together butter & sugar.* Add flavoring & mix well.

Stir in flour & fold in the chopped almonds.

Shape into small balls & place on ungreased cookie sheet. I can fit a whole batch on a jelly roll pan. They don't flatten so they can be pretty close together. I also rolled these a little bigger than I usually do.

Bake in preheated oven, 350 degrees, for 20 minutes.

Roll in powdered sugar while warm.

Makes 3-4 dozen.

*I suggest you use butter. Margarine will make the dough too soft & sticky to handle and roll.
I usually always have to use the full 2 cups of flour.

Are these the delicious cookies you made for us for Christmas? I think I was the only one who ate them no one else was fast enough!Is there really only 3 TBSP powdered sugar in the dough?

Yes, there is only 3 Tbsp powdered sugar and what you roll them in!
