Almond Butter Balls - Danish

These were my dad's favorite Christmas cookie. My Grandma (amazing cook) would make them for him every year!

1 cup soft butter*
3 Tbsp powdered sugar
1 tsp vanilla
1/4 tsp almond extract
1 - 2 cups flour (sifted)
1 cup chopped almonds (slivered works great as well)
Powdered sugar

Cream together butter & sugar.* Add flavoring & mix well.

Stir in flour & fold in the chopped almonds.

Shape into small balls & place on ungreased cookie sheet. I can fit a whole batch on a jelly roll pan. They don't flatten so they can be pretty close together. I also rolled these a little bigger than I usually do.

Bake in preheated oven, 350 degrees, for 20 minutes.

Roll in powdered sugar while warm.

Makes 3-4 dozen.

*I suggest you use butter. Margarine will make the dough too soft & sticky to handle and roll.
I usually always have to use the full 2 cups of flour.

The Best Oatmeal Raisin Cookies

1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cups butter — (2 sticks) room temperature
1 1/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 large egg
1 teaspoon vanilla
2 tablespoons milk 2 1/2 cups Quaker oats, (quick or old fashioned, not instant)
1 3/4 cup raisins (or half raisins & half chocolate chips)

Preheat oven to 375°F.

In a medium bowl, thoroughly stir together flour, baking soda, cinnamon, salt.

In a mixing bowl, using high speed of an electric mixer, cream butter and both sugars until light and fluffy. Beat in eggs, milk and vanilla.

Stir in the flour mixture. When flour is absorbed, stir in oats, raisins and/or chocolate chips.

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8 to 9 minutes for a chewy cookie or 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

This recipe should yield about 36 cookies.

Jennie added 1/2 cup of white chocolate chips and that is why there are white things in the pictures! ;)

Scutterbotch Cookies

My sister in the mid-west sent me this recipe.

They are very sweet and rich. Make sure you've got some milk to go with them. ;)

1/2 cup packed brown sugar
2 eggs
1 yellow cake mix
1 cup rice crispies
1/2 cup butterscotch chips
1/2 cup milk chocolate chips or chunks
1/2 cup semi-sweet chocolate chips (or white chocolate as I did)
1/2 cup coarsely chopped pecans

Cream together butter and sugar. Add eggs and dry cake mix. Mix well.

Add rice crispies, butterscotch chips, milk chocolate, semi-sweet and nuts.

Spoon onto cookies sheet about 1 1/2 - 2 inches apart. Cook at 375 degrees for 8-10 minutes.

Remove from oven and allow to sit in pan for two minutes before removing to wire rack or counter.

Almond Butter Balls (Danish)

This is probably my favorite cookie ever. Maybe it's because I grew up with it, or maybe it's just because it is the best. ;)

It is a Danish cookie called - Mandelsmorboller

1 cup soft butter
3 Tbsp powdered sugar
1 tsp vanilla
1/4 tsp almond extract
1 -2 cups sifted flour
1 cup chopped almonds
Powdered sugar

Cream butter and sugar. Add flavoring and mix well. Stir in flour and fold in the chopped almonds.

Shape into small 1" balls & place on ungreased cookie sheet.

Bake at 350 degrees for about 20 minutes. Before they start to brown.

Let cool a little and roll in powdered sugar while warm.

Molasses Cookies

Hmmmm.... Cookies!!!

1 1/2 cup margarine
2 cups brown sugar
2 eggs
1/2 cup molasses
4 cups flour
4 tsp soda
2 tsp ginger
2 tsp cinnamon

Measure exact. Roll into soft ball and roll in white sugar.

Cook for 10 minutes at 350 degrees. Do not overcook and cookies will stay soft!

You can cut this recipe in half, but why would anyone want to make less cookies?

Banana Cookies

1 C butter (I use butter flavor Crisco)
1 C sugar
2 eggs
1 C mashed banana
1/2 C buttermilk (I use sour cream)
1 tsp vanilla
1 1/2 tsp soda
1/2 tsp salt
3 1/2 C flour (more to stiffen)
about half a bag of milk choc chips

Cream butter and sugar together, add eggs. Mix in banana and buttermilk (sour cream) and vanilla. Mix in dry ingredients. Add enough flour so that it is more like a soft dough. (For my double batch, I added more than another cup.) It should be a little sticky. Add choc chips.

Lightly spray cookie sheet and place about a tablespoon size dallup (is that spelled right?) mound for each cookie. They will not flatten and spread.

Bake at 350 degrees for about 8 to 10 minutes.

The cookies don't brown unless they are over done. If the edges look slightly brown and the middle is set then they are done.

Frosting
1/2 c melted butter or margarine
1 tsp vanilla (I use banana extract!)
1 Tbs milk
2 C powdered sugar
Cream together and frost cooled cookies.
Some say it makes the cookie, some say they don't need the frosting at all.
Beware these are VERY yummy!! I doubled this recipe and it made over 100 cookies! But both times I've made it, they have been gone in two days!
