Tolerine

This makes a lot, but it's great for left overs, too!!


2 lbs ground turkey
dehydrated onion, to taste
3 8oz cans tomato sauce
1 can cream of chicken soup
1 to 2 cans diced tomatoes, (I prefer 2, my kids prefer 1)
1 can black olives, sliced
10 - 13oz grated cheddar cheese, use more or less to taste
1 lrg pkg egg noodles (about 7 - 8 cups dry)
salt & pepper to taste


Brown ground meat, onion & salt and pepper. Drain if necessary. Add soup, tomato sauce, and diced tomatoes (juice and all); simmer while noodles are cooking in separate pot according to pkg directions.


Drain noodles, put back in pot and pour sauce into the noodles. Add about 8 to 10oz grated cheese & olives. Pour into 10 X 15 pan, sprayed with cooking spray and bake at 350 just long enough to heat through. Top with more cheese, if desired.

Scrumptious Stroganoff

I felt like Stroganoff this evening; however, I didn't have any mushrooms so I altered my other Stroganoff recipe and I really liked it.

1/2 lb ground hamburger
1/4 cup onion thinly sliced (or 1 Tbsp dried onion)
2 Tbsp butter
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
1/2 cup cut up olives in with juice
1/2 cup sour cream
1/4 cup chopped dill pickles

Brown the hamburger and onion in butter. Add undiluted soup and olives with liquid. Cook over low heat until hot. Mix in sour cream and pickles.

Serve over cooked egg noodles. This recipe goes with about five or six cups of uncooked egg noodles. It makes a lot!

Easy Skillet Pasta

1/2 lb ground beef
3 cups pasta (suggested mostaccioli) but I'd use whatever you feel like
2 1/2 cups water
1/2 tsp Italian seasoning
1 tsp sugar (optional)
2 cups shredded mozzarella cheese, divided
1 jar/can spaghetti sauce
1/2 cup Parmesan cheese

Brown meat in a large skillet, drain excess fat.

Add water and bring to a boil. Reduce heat to medium low and stir in pasta, cover. Simmer for 15 minutes or until pasta is tender.

This is before the cheese was placed on top!

Sir in sauce and 1 cup mozzarella cheese. Sprinkle with remaining cheeses, cover and allow cheese to melt for about 3 minutes.

Serve in the skillet!

Crab Pasta Salad

1 (16 oz) package pasta (I used Ditalini)
3/4 cup mayonnaise
1/2 cup Miracle Whip
1/3 cup Parmesan cheese
1 Tbsp dried onion
1 tsp season salt
3/4 cup peas
1/2 green pepper
2 celery stalks
1/2 package imitation crab

Cook pasta according to package directions.

Mix mayonnaise, Miracle Whip, Parmesan cheese, onion and salt with pasta.

Cut up celery, green pepper and imitation crab, add along with the peas to pasta mixture.

Mix together and allow to sit in fridge for at least 2 hours.

You can adjust the mayo and miracle whip to how you like it (more, less, different ratio's); enjoy!

Hearty Noodle Casserole

This was nice and fast. It is definitely a keeper. My kids loved it and so did I!

1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 cup Milk
1/2 tsp ground pepper
1/2 cup Parmesan cheese
1/2 cup mixed vegetables
5 cups medium egg noodles, cooked and drained
1 cup shredded cheese

Stir soup, milk, black pepper and Parmesan cheese together.

Place cooked noodles in the bottom of a 9 x 13 pan and pour mixed vegetables over (can be frozen at the time).

Pour soup mixture over noodles and mix a little.

Bake at 350 for 30 minutes or until hot. Stir. Top with the grated cheese.

This also is great with 2 cups cooked cubed chicken.

Baked Pasta

1/2 lb hamburger
2 small cans mushrooms
3/4 cup olives
1 can Chunky Vegetable Spaghetti Sauce
1 cup Alfredo sauce
12 oz dry penne pasta
2 1/2 cups shredded mozzarella cheese, divided

Brown hamburger and season with salt and pepper.

Cook pasta according to package directions and drain.

Heat Spaghetti and Alfredo sauce together. Add mushrooms, olives and cooked hamburger (I had some left over veggies that I added as well, if were wondering about some of the pictures). Add 1 1/2 cups cheese. Pour into 9 x 13 casserole dish. Toss in pasta and top with remaining cheese.

Bake 10 minutes or until cheese is melted.

Lasagna

This is combination of my mother's lasagna and my husband's preference.

1/2 lb ground beef
7-8 lasagna pasta (uncooked)
32 oz spaghetti sauce
32 oz cottage cheese
grated mozzarella or Colby Jack cheese

Brown ground beef and season with salt and pepper. Mix in spaghetti sauce.

Layer in a 9 x 13 casserole dish: about 4 uncooked pasta, 16 oz cottage cheese, 1/2 meat mixture and repeat with remaining. Top with cheese.

Cook at 350 degrees for about 1 hour. Let cool down for about 30 minutes. This will help it absorb all the extra juices as well.

I made this today, but I didn't take any pictures. I will have to do so next time.

You can get the spaghetti sauce $1.00 for a 26 oz can on sales, and I use about 1 1/2 cans. This is cheaper and easier than making your own from cans of tomato sauce.

Homemade Macaroni and Cheese

2 Tbsp butter or margarine
2 Tbsp flour
1 1/2 cup milk
1 cup grated cheddar cheese
Salt and Pepper to taste
6-8 oz macaroni (or shells), cooked and drained
1/3 cup bread crumbs
1 tsp melted butter

Melt butter in frying pan. Add flour and stir constantly until mixture bubbles and turnes a light tan color. Add milk and heat to a boil over medium heat, stirring constantly until thickened. Turn off heat and fold in cheese to form a creamy cheese sauce.

You can fold pasta into the sauce at this point and serve; however I like the bread crumbs topping.

Put cooked macaroni in 1 1/2 quart (square) casserole dish and pour the cheese sauce over. Mix gently to combine.

Sprinkle with mixture of bread crumbs and melted butter. Bake uncovered at 350 for 30 minutes, until bubbly.

American Goulash

So my husband served in the Czech Republic for 2 years and informs me many times that goulash does not include noodles. The European goulash is apparently very different from what I grew up with.

This recipe is one I grew up with. In a family of 8 children and very short on cash through the eighties, you could call it recession cooking. ;)

1/2 lb hamburger
3 cups macaroni
1 jar spaghetti sauce
1/3 cup ketchup

Cook macaroni. While cooking you can brown the hamburger (onion is pretty good with the hamburger if you have any). Drain excess fat off hamburger.

Drain Macaroni. Mix in cooked hamburger, spaghetti sauce and ketchup. Mix and serve.

Other things that add flavor are canned mushrooms and tomatoes.
Hot dogs can also be used in place of the hamburger.

Homemade Egg Noodles

1/2 cup semolina or bread flour
1/8 tsp salt
touch of pepper
1 egg
1/2 - 1 tsp water

Pour flour into a pile on pastry plastic (I use this a lot if you can't tell in my other posts). With hands, stir in salt and pepper. Form a well in the center of the flour pile and add eggs. Manipulate with hands until egg is fully incorporated into the flour mixture. Add a little water, a few drops at a time, to form a stiff, smooth dough. Knead well. Cover with plastic and let stand 5 minutes.


Roll very thin and cut into strips about 1/4" thick (I use a pizza cutter to cut the strips). Cook immediately in 3 quarts boiling salted water (or soup) or let dry on wooden pasta rack until firm and refrigerate for up to three days.
